METHOD

Toast bread until golden.
• Step 2
Add the inside of the CBD capsules or 6-10 CBD oil drops to the hummus. Spread toast with hummus. Top with sliced tomato, egg and parsley.

Greek yogurt MAKE AHEAD Breakfast

Fuel your morning with this SWEET meal! Chia seeds are a great source of fat, fiber, protein, and antioxidants.

INGREDIENTS

• 1 cup plain non-fat Greek yogurt
• 1 tablespoon chia seeds
• ⅓ cup granola
2 CBD capsules/CBD oil drops
• ¼ cup blueberries
• 3 strawberries, sliced
• 6 blackberries
• 1 teaspoon honey, optional

METHOD

1. In a bowl, add the Greek yogurt and chia seeds and stir to combine.
2. Place half of the yogurt mixture in the bottom of a large glass, and top with half of the granola, blueberries, strawberries, and blackberries.
3. Add the CBD powder from the capsules or the CBD oil drops into the dish
4. Top with remaining yogurt mixture, berries, and optional honey.

Cashew  Coconut Date Rolls

These cashew coconut date rolls make for a quick and energizing snack when you need a quick pick me up.

INGREDIENTS

• 14 large soft Medjool dates, pitted
• 2 Tablespoons/30g raw cashew butter
• 2 Tablespoons/30g coconut oil (at room temperature)
• The seeds from half a vanilla stick
• A good pinch of sea salt
• 28g raw cashews, finely chopped
• Unsweetened shredded organic coconut for rolling

METHOD

1. Put dates, cashew butter, coconut oil, vanilla bean seeds, and salt in the bowl of a food processor and pulse until smooth and mixture start to come into a ball. Stir in chopped cashews. Open 10 CBD capsules and mix in the powder or drop 50 drops of your CBD oil into the mix and stir well. Place in the fridge to firm for 10 minutes.

2. Using lightly greased hands roll date mixture into a long rope and cut into bite-sized pieces. Place shredded coconut in a shallow dish and roll each date log completely in the coconut. Serve immediately or place in the fridge to firm and enjoyed chilled.

3. Date rolls with keep in an airtight container in the fridge for at least 2 weeks.

Green Toad in the Hole

We combine spinach, feta, and eggs in this healthy version of the classic breakfast.

INGREDIENTS
• 300g baby spinach
• 2 tablespoons chopped fresh chives
• 30g Danish feta, crumbled
8 CBD capsules
• 4 x 3cm-thick slices sourdough bread, lightly toasted
• Extra-light olive oil cooking spray
• 4 eggs

METHOD

Heat a large non-stick frying pan over high heat. Add the spinach and 1 tbs water and cook, tossing, for 2 minutes or until wilted. Transfer to a heatproof bowl and add the chives and feta. Season to taste and stir until well combined. Set aside.

Using a small knife or 7cm round cutter, cut a round out of the center of each piece of toast. Set the rounds and outer pieces of toast aside.

Reheat the same frying pan over medium heat. Spray with oil and place the outer pieces of toast in the pan. Fill each toast hole evenly with the spinach mixture, patting down firmly. Crack an egg over the top of the spinach mixture and season to taste. Cook, untouched, for 6 minutes or until the egg whites have set and the yolk is still runny.
Set the rounds and outer pieces of toast aside.

Sprinkle the CBD powder from the capsules over the finished dish – remember that the powder is odorless and tasteless, so you won’t even know it is there!

INGREDIENTS

• 90g walnut halves
• 1 tablespoon chia seeds
• 30g cacao powder
• 85g seedless raisins
• 150g fresh dates pitted
• 30g 85% dark chocolate, chopped

PEANUT LAYER

• 50g (1/2 cup) rolled oats
• 100g (2/3 cup) unsalted peanuts
• 90g (1/3 cup) peanut butter
• 200g fresh dates pitted

METHOD

Line a 19cm square (base measurement) baking tin with baking paper allowing the paper to overhang to opposite sides to form handles.

Add the walnuts, chia seeds, and cacao in a food processor. Process until finely chopped. Add the raisins, process until well combined. With the motor running, start adding the dates a few at a time, until all the dates are added and the mixture starts to come together. Use clean hands to bring together completely. Press mixture into the prepared tin, smoothing the surface with the back of a spoon. Chill until firm.

Meanwhile, place oats and peanuts in a food processor. Add peanut butter, process until combined. With the motor running, start adding the dates a few at a time, until all the dates are added and the mixture starts to come together. Use clean hands to bring together completely while adding either the inside of the 20 CBD capsules or 50 CBD oil drops. Press mixture on top of the chocolate layer, smoothing the surface with the back of a spoon. Chill until firm.

Put the chocolate in a small bowl over a saucepan of gently simmering water, ensuring the base of the bowl does not touch the water. Cook stirring until melted and smooth. Drizzle the melted chocolate over the top of the brownie. Refrigerate until set. Remove brownie from the tin using paper handles. Trim edges and cut into 16 squares.

INGREDIENTS

• 10 fresh dates, seeded, coarsely chopped
• 1 cup (90g) rolled oats
• 1/4 cup (35g) reduced-sugar dried cranberries
• 1/4 cup (50g) pepitas (pumpkin seeds), toasted
• 2 tablespoons almond butter or any other nut butter of your choice

METHOD

• Step 1
Place the dates in a food processor and process until smooth paste forms. Transfer to a medium bowl. Add the oats, cranberries, pepitas, and almond butter and stir until well combined. Open the capsules and add the CBD powder or add 50 drops of CBD oil into the mix and stir thoroughly.

Make a baking tray ready with baking paper. Use wet hands to roll tablespoonfuls of the date mixture into balls. Place on the prepared tray. Place in the fridge for 1 hour to set. Store in an airtight container for up to 2 weeks.
